Regarding SPN stories - I always find myself writing in Dean POV - his voice just seems to come through loud and clear and it's funny because I'm still and probably always will be more partial to Sam. Maybe it's because I like the way Dean sees Sam, what Dean sees in Sam.

I want to practice my Sam voice though because I want to do a wing!fic piece from his POV. Anybody want to let me know a story of mine they want to see from Sam POV? (Obviously not any of the wing!fic pieces... :))

I think that is definitely part of it. Or at least it is true for some circumstances or the story one is trying to tell. But at least for me, I tend to write from characters I don't relate to as well. Not to say I am dean because yikes LOL But I can relate to a lot of his core traits and perhaps I like the distance of getting into a character's a head that I don't identify as much with. It makes for an interesting reflection.
